Coconut Rum Balls



Another one from Mom.
Makes about 2 dozen.
  • 2 cups finely crushed chocolate wafers (lots of times those cheap, bulk cookies from the supermarket are vegan.)
  • 1 cup sifted powdered sugar
  • 1 cup pecans or walnuts, finely chopped
  • 1/4 cup light corn syrup
  • 1/4 cup dark rum (how about Frangelica?? MMMmmmMM.)
  • 1 cup flaked coconut
1.In a medium bowl, combine the chocolate wafer crumbs, sugar, nuts, corn syrup and rum.
2.Using your hands, mix until the ingredients are well combined. It will be stiff and sticky.
3.Shape into 1 inch balls.
4.Roll in coconut.
5.Refrigerate, covered overnight.

6.If desired, you can roll these suckers in more coconut just before serving.
