Chocolate Peanut Butter Porcupines


Chocolate Peanut Butter Porcupines
Grandma Millie used to bring me these every summer.(She made them with butterscotch morsels instead of chocolate chips).
  • 1 12oz package semi-sweet chocolate chips
  • 4 tablespoons peanut butter, crunchy or smooth
  • 2 cups dry roasted peanuts, halved
  • 1 3oz can Chinese noodles (I could only find a 5oz can so I used less)
  1. Melt the chocolate chips on top of a double boiler*. 
  2. Stir in the peanut butter.
  3. Remove from heat and stir in the peanuts and Chinese noodles.
  4. Drop from a soup spoon onto waxed paper.
  5. Refrigerate until set.
*If you don't have a double boiler, simply place the chips in a Pyrex® type bowl over a small pot containing about an inch of boiling water. Stir all the while until the chips melt. 

Made with vegan butterscotch chips! Use 'em instead of chocolate if you can find 'em!
