Buckeye Balls

 Buckeye Balls
These are faster and easier to make than a batch of cookies, and the recipe can be halved easily with great results.
  • 1 cup natural crunchy peanut butter with salt (add salt if using unsalted pb)
  • 1/2 cup powdered sugar
  • 1 cup rice crispy type puffed cereal
  • 1 bag semi-sweet chocolate chips
1.Mix together the peanut butter and powdered sugar.
2.Add the puffed rice cereal and mix to disperse the rice well. It helps to use your hands.
3.Chill for 15 minutes. While the mixture is chilling, line a cookie sheet with waxed paper.
4.Roll the peanut butter dough into 1 inch balls and place on the waxed paper covered cookie sheets.
5.Return to the fridge.
6.Meanwhile, melt half the chocolate chips in a double boiler over barely simmering water. If you don't have a double boiler, just place an enameled or glass bowl over a small saucepan of water. Stir until completely melted.
7.Remove the balls from the fridge. Using a spoon, carefully place a ball into the melted chocolate and roll it to melt. When covered in chocolate place the ball back onto the waxed paper.
8.Repeat with the rest of the balls. When you run out of chocolate, melt more and repeat.
9.Place the balls in the fridge to set the chocolate or freeze. I like to eat them right out of the freezer because it makes the chocolate really crunchy. Serve on little cupcake papers to be fancy, or fill a box to make a quick gift.
