Collard Greens





What You Need:
  • vegetable oil
  • 1 small onion, minced finely
  • 3 strips Fakin' Bakin, minced (Lifestream brand smoked tempeh strips)
  • 12 tablespoons vegetable broth
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon liquid smoke
  • 1/2 teaspoon salt
  • 1 16oz bag chopped collard greens, frozen
What You Do:
  1. Saute the onion and salt in several tablespoons of vegetable oil until the onions are very soft and beginning to caramelize.
  2. Add the Fakin' Bakin and keep stirring until the tempeh crisps.
  3. Add in the entire bag of frozen collards and the broth. Stir to help the greens defrost.
  4. After the greens have softened up a bit, stir in the nutritional yeast and liquid smoke.
  5. Reduce heat and cover until the collards become tender. If there is too much broth in the bottom of the pan, cook for a few minutes with the lid off to let the liquid reduce.
  6. Season with salt and pepper.
